A Mayfair chef , a creative chef with a passion for taste above all else. We were quite excited about going to this – what would he do with the menu in the restaurant? We were asked to shoot dishes from a new menu created by a chef who had just joined the Royal with a background in London’s restaurant scene. The Royal’s restaurant is a step back to 1950’s dining and cream teas. As for the menu? We weren’t disappointed, especially with the baked goats cheese and pine nuts – a chef bringing London ideas to the Highlands.

Presentation is everything. Watching chef’s attention was exhausting.

To be honest most chefs we work with, present their creations with the upmost detail. Only a few do not really bother. However, this chef’s attention to the slightest detail was amazing.

The parsnip crisps on this were amazing.

Only they had a bit of a behaviour problem. You can’t see the pins or sticks all holding this together. It arrived to the table perfect… and then gave us hell for the fun of it! YRSCommercial, Restaurant Photographer, Stafford.



A photo shoot in the Royal Hotel, Tain, Inverness.

The shoot was to be done using the fabric of the restaurant, the owner was quite specific about this as the branding of the hotel and restaurant was being developed following new ownership. So we were presented with stunningly crisp table cloths, silverware and glass ware. The only thing is white plates plus white table cloths can make the dish look a little flat. We ended up using their maroon covers and then changing them in the studio by de-saturating them in layers – here’s us saying we do not manipulate the images unless necessary. On this occasion it was – the maroon looked simply wrong on the screen – the dishes a little too contemporary for the 1950’s look!.

THE FOOD PHOTO SHOOT

Chef was extremely organised – too organised at times as we couldn’t keep up – and that doesn’t happen very often! He’d structured the flow from starters and small dishes to the more complex – giving him time to manage the shoot and the mid morning service period – yes, all those cakes and high teas! Then we went on to the sweets. Our only problem ( and our fault really ) was the over head lighting. We normally have a gantry set up with a white diffusor above the table if down lighting or other bright lighting is used in the room. And… well, we forgot it! So it all had to be hand held!

The only misbehaving dish which had both team and chef cursing was the fantastic steak dish (see above inset). It was the parsnip crisps (and yes, they were stunning to taste) just wouldn’t stay in place – sliding down as soon as we turned our backs. It arrive perfect – then fell apart, chef having to rebuilding, rebuild and then rebuild.

So out came the bamboo sticks and endless dress making pins and the house of cards so to speak was made indestructible! And yes, the gentle dressings on other dishes were stunning, the baked goats cheese sublime. And all in the small town of Tain, famous for Madonna’s wedding, the burning of witches and a very nice bit of beach.
