We were asked in by the owner chef to not only capture her skills for a new website but also the quality of the ingredients she uses. The Balavil Hotel is a large imposing building in the centre of Newtonmore, a favourite for large tourist coach parties, the menu a traditional combination of filling bar meals and then fine dining dishes – so our shoot ranged from a huge fish supper meal to venison on a potato gnash!

It’s always a challenge of making the image not look cluttered, when the food photography is about presenting the table and not just the dish!
The styling involved in a table shot is huge… we cannot over emphasise this. First you set the table and dishes and then you spend ages moving things around so that the image doesn’t look cluttered. It even involves changing the dishes in the distance so they do not argue with those in the foreground.
If we arrive around 11am it’s the best time to capture staff setting out the tables and preparing the restaurant… in a relaxed fashion.
Why try shooting staff in the middle of the service period? Worse still at night? They always look stressed and quite frankly hacked off with a photographer asking them ‘just hold a second’. So plan the shoot, then shoot it in the morning whilst everyone is relaxed. YRSCommercial, Restaurant Photographer, Inverness.

We entered the very large dining room at the front of the hotel and took over a single table window side. Set to fine crisp with table fabrics and highly polished flatware, we were asked to shoot two ways, sell the table and then sell the dish. Key to the Balavil Hotel is the size of the meals. You certainly get your money’s worth and the owner wanted this demonstrating at every chance as the tourist traffic had many options in the village if small parties were involved – she commanded the large party traffic but small parties mean’t perhaps all year traffic in the dining room and not just the heavy coach holiday periods.

THE FOOD PHOTO SHOOT
As with so many restaurant shoots, we were asked whilst chef was busy starting the preparations to capture staff and the restaurant interior – nothing heavy just a quick shoot as during the quite periods the rooms take on a completely different character, staff preparing tables a little more relaxed and you have the space to get around with gear and not trip over guests or diners.
As this was a very structured shoot – only certain dishes from a very wide range on the menu, the flow was simple – no sudden ‘can we just shoot’ requests. So for ourselves a relaxed start and simply waiting for the dishes to arrive.

As the menu arrived we tried to use only natural light – filling in with continuous lighting as needed with soft boxes. At times the white light became a little over powering – the windows are huge – so we used flags to control as much of the flashing as possible on rich sauces and yes, sweet deserts!
A very relaxed shoot with amazing meals that don’t break the bank – rare in the Highlands!
